Briochef introduces three new dishes: the new Old Money, Quesillo, and Onion Soup
At Briochef, we’ve always believed that cooking isn’t just about feeding people, but about evoking emotion, creating moments, and leaving a lasting impression with every bite. That’s why, whenever we consider adding new dishes to our menu, we do so thoughtfully, with intention, and with the desire to offer something truly worth discovering.
This March, we’re taking another step on that journey, and we want to share it with you. We’re back to surprise you with three offerings that stem from our essence but also explore new nuances: the revamped Old Money, our delicate Quesillo, and a comforting Onion Soup. Three distinct ways of experiencing flavor, yet with the same goal: for you to enjoy every moment at the table.
The New Old Money: Character, Depth, and Balance
Some burgers are just eaten… and others are remembered. The Old Money belongs to the latter group.
When we set out to redesign it, we knew we didn’t want to just make an improvement—we wanted to take it to a whole new level. We started with our house brioche bun—which you already know, soft and slightly sweet—and built everything else around it as if it were a work of art crafted with meticulous attention to detail.
The heart of this burger is a premium blend of aged Galician beef, juicy, intense, and full of nuances. It’s a meat that needs no frills, but it transforms when paired with ingredients designed to complement it without overshadowing it.
The slowly caramelized champagne onions add that sophisticated, slightly sweet touch that balances the meat’s intensity. The melted cheese, cooked to perfection, embraces every layer without overpowering it. And then come the nuances that truly define it: a homemade Parmigiano mayo that adds depth and a dark red wine base with demi-glace, concentrated to an intensity that’s felt in every bite.
The result is a burger that doesn’t aim to be the flashiest, but the most complete. One of those that, when you’re done, leaves you wondering when you’ll order it again.
Quesillo: a dessert that embodies tradition and attention to detail
We wanted this new chapter to include something sweet—something that would evoke memories while also aligning with our approach to cooking. That’s how our Quesillo was born.
Inspired by the Venezuelan classic, we’ve approached it with respect, but also with a more modern twist. We prepare it in a double boiler, with the time and patience it requires, to achieve that smooth, creamy, and uniform texture that defines it.
The golden artisanal caramel provides that essential contrast, with a balanced sweetness that never feels excessive. Natural vanilla appears subtly, complementing without overpowering. And, almost without you noticing, light citrus notes emerge, refreshing the whole and making it even more interesting.
It’s a dessert that doesn’t seek to surprise with boldness, but with balance. One of those that you enjoy slowly, spoonful by spoonful, and that works just as well as the finale to a special meal or as a little treat at any time of day.
Onion Soup: The Joy of Comfort Food
There are dishes that have the power to make us feel right at home from the very first bite. For us, onion soup is one of them.
In our version, we wanted to stay true to its essence, while paying close attention to every detail so that the experience lives up to our expectations when we sit down at the table. It all starts with onions caramelized slowly, without rushing, allowing them to release their natural sweetness little by little.
From there, we build a beef broth with hints of white wine and aromatic herbs, seeking that balance between depth and freshness that makes every spoonful rich yet light at the same time.
The finishing touch is, perhaps, one of the dish’s most special moments: the crispy bread that soaks up the broth slightly, and the layer of golden, melted gratin cheese that breaks apart when pierced with a spoon, blending with the rest and releasing its full aroma.
It’s a dish meant to be savored without haste, for those days when you crave something warm, flavorful, and full of nuance.
